Overview

In this hands-on workshop, learn how to craft traditional wagashi---delicate, seasonal Japanese treats---in a local Wakayama sweet shop. You will create four different kinds of sweets, each showcasing different shaping techniques and fun approaches to design. At the end, you can eat your tasty work or simply admire it.

    1. Each wagashi will begin with a soft, dough-like outer layer—similar to nerikiri dough—which we will color with natural dyes and wrap around a sweet paste filling. For our first creation, we will place the ball of dough and filling into a wrap, twist it to create a chrysanthemum-like flower with soft, swirling “petals,” and add a realistic floral touch by pushing yellow dough through a mesh strainer to form tiny, pollen-like threads in the center. 2. The second sweet involves shaping a more structured flower by carefully snipping petal shapes into the surface of the dough with small scissors—a traditional technique used to mimic blossoms like camellias or sakura. 3. Next comes a more playful design: a dog-shaped sweet made by attaching small dough shapes to form the ears and nose, and finishing it off with tiny sesame seeds for the eyes. 4. For the final sweet, we will use carved wooden molds to press floral patterns into the dough, a precise yet meditative technique that produces an elegant, intricate result. You will have your choice of three different flower shapes, including the beautiful Japanese sakura flower!
