概要

Feudal Kanazawa had an inside and an outside. This morning you walk from one to the other, and find out they were never separate.

You start in the garden the Maeda lords kept for themselves. It predates Kenrokuen next door and was never meant for guests — a compact, vertical landscape built into the castle's own slope, with a waterfall dropping from midway up the stone wall. The wall itself is worth the trip: patterned like scattered poem cards, laid as scenery rather than defense, and found in no other castle in Japan. Gyokusen'in, wife of the second lord and daughter of the warlord Oda Nobunaga, lived on this ground. The garden vanished in the Meiji era and was rebuilt from what excavation could prove, reopening in 2015.

In the teahouse facing it, you sit on tatami with a seasonal sweet and a bowl of matcha while your guide talks you through what the lords were actually looking at, and why the sweet always comes first.

Then you walk out of the castle. Through the grounds, out the great gate, and down into Owaricho — the merchant street that supplied the castle for three centuries and still does business on the same corners. Your destination has been making fu there since 1865. Fu is wheat gluten, and it is the quiet backbone of this region's food: in tea-ceremony kaiseki, in temple cooking, in jibuni, the stew every Kanazawa household argues about.

At the workbench you build your own soup monaka — a crisp shell you fill from dozens of fu shapes and dried vegetables, then pair with one of six dashi and miso bases. Three of them, sealed and shelf-stable, go into your bag. Weeks later, at home, you pour hot water and the shell opens.

The bowl you drank in the castle and the bowl you carry out of the shop come from the same three hundred years.

    Kanazawa Castle Park

The garden that was never on the guest list

Your guide meets you at the garden entrance. A short walk in first: the stepped waterfall spilling from the stone wall, the pond shaped to the castle's terrain, and the poem-card stonework that has no equivalent anywhere else. Your guide explains who Gyokusen'in was, why this garden was private when Kenrokuen was public, and what was dug out of the ground to rebuild it.

    玉泉庵(玉泉院丸庭園内)

A bowl of matcha, in the room the garden was made for

Tatami seating, the garden filling the window, a seasonal wagashi and a bowl of matcha. Not a formal ceremony to sit through — the way tea has actually been taken in this room: unhurried, in conversation. Your guide walks you through the order of things and what the season has to do with what you're holding.

Out of the castle, into the street that supplied it

Castle grounds → Ote-mon → Owaricho Thirty minutes on foot. Across the Sannomaru grounds, out through the great gate, along the outer moat and down into Owaricho, where the merchant houses that served the castle still trade. Your guide uses the walk to set up what's coming: what fu actually is, why a wheat product became essential to a rice culture, and how Buddhist temple cooking put it on the lords' table.

    加賀麩 不室屋 尾張町本店

Build your own bowl, at a counter working since 1865

Forty-five minutes at the workbench. Choose your fillings from dozens of fu shapes and dried vegetables, pack them into the monaka shell, and pick your broth from six dashi and miso bases. Three finished pieces, sealed to travel. Your guide interprets throughout, so the staff's explanation of the craft actually reaches you.

The house specialty, and where to go next

Before you leave, the dessert counter serves shiratama nama-fu — fresh fu, soft as mochi, made the way it has been for generations. Your guide hands over their own list for the rest of the day: Omicho Market is five minutes one way, Higashi Chaya fifteen the other.

Gyokusen'inmaru Garden entrance

1-1 Marunouchi, Kanazawa City, Ishikawa

The closest entrances to Gyokusen'inmaru Garden are the Imorizaka Gate and the Gyokusen'inmaru Gate — pass through Nezumita-mon Gate and the garden is right there.

注意事項

★ Good to know
Please arrive at the Gyokusen'inmaru Garden entrance by 9:00. Enter from Imorizaka or Gyokusen'inmaru Gate — the garden is just past Nezumita-mon.
Maximum 6 participants — always private, never merged with another group.
The teahouse is tatami seating. Let your guide know at booking if sitting on the floor is difficult; a seat can be arranged.
Your three soup monaka are sealed and shelf-stable, so they travel well and clear customs as dried food in most countries. Please check your own country's rules if unsure.
Contains wheat. Please tell your guide at booking about allergies or dietary needs — the fillings can be adjusted, but the shell cannot.
The walk between the two stops is about 30 minutes on flat ground with a gentle slope out of the castle. A taxi can be arranged instead — please request at booking.
Suitable for children. Assembling the monaka works well for younger travelers.
Garden admission is free; the teahouse and workshop fees are included in the price.
The garden and teahouse may close temporarily for maintenance or weather. Your guide will contact you in advance and propose an alternative.
