Overview

Kanazawa sits on the Sea of Japan, and locals will tell you it's one of the best sushi cities in the country. Now you can learn the craft from a master who has spent more than 50 years behind the counter.

At Akamechan, a cozy sushi and sukiyaki restaurant three minutes from Kanazawa Station, the chef takes you through the full process, step by step:

  • Season traditional sushi rice the way professionals do
  • Watch the master fillet a fresh fish right in front of you
  • Make tamagoyaki, the sweet Japanese rolled omelet
  • Learn a decorative knife technique by carving a bamboo leaf
  • Shape 4 pieces of nigiri and 1 sushi roll with your own hands

Then sit down and eat what you made. To finish, you'll receive a certificate to remember your day as a sushi apprentice.

Beginners and families are welcome. The chef's patience is as legendary as his knife skills.
