Overview

Ask any Kanazawa chef about the secret of local cuisine, and many will say one word: fu.

Fu is wheat gluten, made from little more than flour and water, and it has been part of Kaga cooking for centuries. Fumuroya has crafted it since 1865, and its Higashiyama shop sits in a beautifully restored machiya townhouse at the end of Higashi Chaya's main street.

In this hands-on experience, you'll create your own instant miso soup, Kanazawa style.

Start by choosing your base from four kinds of miso: rich red, mellow white, Kanazawa's own Kaga miso, or a balanced blend. Then fill your soup with colorful fu in playful shapes and dried Kaga vegetables, the heirloom produce Kanazawa is famous for. Every combination is yours to design.

You'll make 3 servings, so you can mix and match flavors or create a set to share. When you get home, just add hot water, and a bowl of Kanazawa is ready in seconds.

Why you'll love it:

  • A souvenir you can actually taste, designed by you
  • Pick from 4 miso styles and mix your own toppings
  • Over 160 years of fu-making tradition behind every ingredient
  • Light and easy to carry, it makes a great gift for friends back home
