Kagafu Fumuroya Owaricho Main Store
“Pour hot water and watch a treasure box bloom—160 years of Kaga fu craft.”

Fumuroya has been making fu—Japan's traditional wheat gluten—in Kanazawa's Owaricho district since 1865, and this is where it all began. The shop's signature creation is "Takara no Fu" (treasure fu), an instant soup shaped like a small treasure box: pour in hot water and the crisp shell opens to release colorful fu pieces and vegetables that fill the bowl. It has become one of Kanazawa's most loved souvenirs, but buying it at the dignified main store carries a charm of its own. The store also runs a hands-on workshop where you craft your own soup monaka—choose your fillings from dozens of fu shapes and vegetables, pick a broth from six dashi and miso bases, and take home three one-of-a-kind creations (2,000 yen per person, about 45 minutes, no reservation needed). A small dessert corner serves the house specialty of shiratama nama-fu, a soft, mochi-like fresh fu sweet. Located on the walk between Omicho Market and the Higashi Chaya district, Fumuroya offers a quiet, delicious window into the depth of Kanazawa's food culture.
